Vegan tofu cajun scramble

Overview

Tofu is extremely bland tasting so really needs strong flavours to make it palatable. This tofu scramble with Cajun seasoning gives such depth of flavour you'd never know it was tofu.

The whole meal can be made in one large frying pan and cooked in stages at the same time.

Ingredients

  • 300g firm tofu

  • 1 tbsp olive oil

  • 2 tsp Cajun spice blend

  • 1/2 tsp ground turmeric 

  • 1/4 tsp mild chilli powder

  • 1/2 red onion chopped

  • 100g cherry tomatoes

  • 400g black beans rinsed (tinned)

  • 15g fresh coriander finely chopped

  • Fresh ground black pepper & sea salt

  • Houmous to serve (optional)

  • Extra mixed salad leaves (optional)

Instructions

  1. Squeeze as much liquid from the tofu using kitchen roll then crumble into large chunks into a bowl.

  2. Sprinkle the Cajun spice blend and turmeric over the tofu, then drizzle half the olive oil and gently mix together.

  3. Heat remaining oil in a frying pan and add the chopped onion. Saute on low heat for 3-4 minutes.

  4. Add crumbled tofu to the pan and turn up to medium heat and stir fry for 3-4 minutes.

  5. Push tofu over to one third of the pan and add 1 tsp oil to the free part of the pan. Add chilli powder and the black beans and stir fry for 2 minutes.

  6. Push back beans over to a third of the pan and add 1 tsp oil and the cherry tomatoes and coriander.

  7. Sprinkle black pepper and salt over the entire pan contents.

  8. Keep stirring each section for a few minutes until the tomatoes have broken down.

  9. Serve onto a bed of mixed green leaves and with a spoonful of houmous.

  10. Decorate with fresh coriander.

Nutrition notes

Tofu is a good plant based protein source which is high in calcium too.
The black beans are another protein source as well as providing fibre and a small amount of carbohydrate. The tomatoes provide vitamin A and lutein - beneficial for eyes and skin.
Serve with a green salad for more fibre, vitamin A, magnesium and potassium.
